Crock Pot Meal
Pork Roast and Apples Serves 8 – 10
Put all the ingredients in a crock pot and come home to a succulent meal.
4 lb. pork loin roast
Salt and pepper
Garlic to taste
6 Granny Smith apples, cored and quartered
1/2 cup apple juice or pear juice
4 Tbsp. brown sugar
1 tsp. ground cinnamon or ginger
Trim fat off the pork roast. Rub the roast with salt, pepper and garlic.
Brown meat in frying pan or under the broiler; drain excess fat.
Layer apples in the bottom of the crock pot. Set browned roast on the apples. Combine juice, brown sugar and spice. Slowly pour over the surface of the roast. Place cover on the crock pot and cook on low for 10 to 12 hours until done (Newer crock pots may cook faster and take less time.)
If desired, thicken apple and juice mixture with corn starch or flour and pour over the sliced roast. For a zesty taste, serve with a side of blue cheese and roasted walnuts.
